Dark Chocolate Ice Cream Szechuan Pepper Fudge Swirl
A beautiful interplay of rich, bitter dark chocolate and the numbing, citrusy heat of Sichuan peppercorns. This recipe pairs the deep, luxurious bitterness of a 70% dark chocolate custard base with a glossy fudge ripple infused with toasted, ground Sichuan peppercorns. The peppercorns provide a subtle, tingling sensation (mรกlร ) that elevates the chocolate's natural fruity notes.

Ingredients
Dark Chocolate Ice Cream Base
- 1 cup whole milk
- 2 cups heavy cream
- ยพ cup granulated sugar
- ยฝ cup high-quality Dutch-process cocoa powder
- 4 oz bittersweet chocolate (60-70% cacao), finely chopped
- 5 large egg yolks
- 1 tsp vanilla extract
- ยฝ tsp kosher salt
Chocolate Szechuan Pepper Fudge Swirl
- ยฝ cup heavy cream
- โ cup light corn syrup (keeps the swirl soft when frozen)
- 4 oz dark chocolate (50-60% cacao), finely chopped
- 3 tbsp Dutch-process cocoa powder
- 1 to 2 tsp Szechuan peppercorns toasted and finely ground
- ยผ tsp kosher salt
Instructions
Make the Custard Base
- Whisk milk, heavy cream, sugar, cocoa powder, and salt in a saucepan over medium heat until steaming.
- Remove from heat, add chopped bittersweet chocolate, and whisk until completely smooth.
- Whisk egg yolks in a separate bowl. Slowly pour 1 cup of the hot chocolate mixture into the yolks while whisking constantly.
- Pour the yolk mixture back into the saucepan. Cook over medium-low heat, stirring constantly, until the custard thickens and coats the back of a spoon.
- Strain through a fine-mesh sieve into a clean bowl. Stir in the vanilla extract. Cover with plastic wrap directly touching the surface and refrigerate for at least 4 hours.
Make the Szechuan Fudge Swirl
- Toast whole Szechuan peppercorns in a dry skillet over medium heat for 2 minutes until fragrant. Grind them into a fine powder using a spice grinder or mortar and pestle, sifting out any hard, woody husks.
- Bring heavy cream, corn syrup, cocoa powder, salt, and your desired amount of ground Szechuan pepper to a brief boil in a small saucepan.
- Remove from heat, add the chopped dark chocolate, and let sit for 1 minute. Whisk until glossy and smooth.
- Transfer to a squeeze bottle or container and chill completely in the fridge before using.
Churn and Layer
- Spoon a layer of the freshly churned, soft ice cream into a chilled freezer-safe container. Drizzle a generous amount of cold Szechuan fudge over it.
- Use a butter knife to gently swirl the fudge through the ice cream in a figure-eight motion.
- Freeze for at least 4 to 6 hours until firm.
If you don't have a lid you can use plastic wrap secured by a rubber band

Szechuan pepper delivers a sensory experience called paresthesia (a tingling, numbing sensation caused by the molecule hydroxy-alpha-sanshool) rather than pure capsaicin heat. Because cold temperatures dull flavors, getting the balance right is crucial.
For a Subtle Tingle (Beginner): Use 1 teaspoon of ground Szechuan pepper in the fudge. The tingling sensation will lag behind the rich chocolate flavor, hitting as a pleasant aftertaste.
For an Electric Tingle (Adventurous): Use 2 teaspoons in the fudge. The numbing sensation will actively compete with the coldness of the ice cream.
The "Bloomed" Test: Szechuan pepper flavor intensifies the longer it sits in fat. Taste the fudge mixture after whisking in the chocolate but before chilling it. If it feels intensely numbing when warm, it will be perfectly balanced once frozen.
Husk Removal: Ensure you sift out the black seeds and hard outer husks after grinding. Only use the fine pinkish-brown powder. Husks add a gritty, unpleasantly bitter texture that overpowers the smoothness of the chocolate.
